The Taco Man opened in 2020 during the heart of the pandemic. It was a challenging time, but the goal was simple—bring comfort through great tacos. With roots in Sonora, Mexico and New Mexico, the idea came from a deep love for real food and honest service. This small shop in Berthoud, CO began as a dream to serve Mexican food that brings people together, even during uncertain times.

The recipes come straight from Sonora, where the focus is on fresh meats, clean flavors, and simple prep done right. All dishes are made from scratch, including the salsa. Most items are gluten-free, and vegan options are available. The flour tortillas are the only exception. Each ingredient is selected with care to keep things real, clean, and tasty—just like it’s done back home.
